2 tablespoons butter, margarine, or olive oil
1 cup chopped celery with leaves
1/2 cup onion, chopped
Chicken (whole) or turkey carcass with neck
1/1/2 cups diced potatoes,
3/4 teaspoon slat
1/8 teaspoon pepper
2 bullion cubes chicken or vegetable or equivalent

Directions:
Saute butter, celery, onion for 5 minutes. Add chicken or turkey with neck. Cover with water. Simmer one hour and forty five minutes. Replace water if necessary. Remove chicken or turkey bones. Clean meat off bones and add it back into the broth. Add potato, salt pepper, bullion. Pasta can be added as well. Cook until potatoes or noodles are cooked. Serve.
