These cookies require 3 batters, green, yellow, red
The following ingredients are for 1 batter. You need to do this 2 more times.
1/4 lb butter (one stick)
2/3 cup sugar
2 eggs
1/4 tsp baking powder
1/2 tsp vanilla extract
1/2 tsp almond extract
food coloring: green, yellow red

1/2 jar apricot preserves
1/2 jar raspberry preserves

1 cup semi sweet chocolate morsels

Cream butter and sugar, keep beating till it come together in cream form, this will take apx. 5 minuets Add eggs and both
extracts, mix well. Combine flour and baking powder, add a little at a time until well blended.
Add 10 drops of food coloring for each batch

Pour into 11x9 inch greased pan and bake at 325º for 22 minuets. Cool thoroughly

Repeat 2 more times

Spread apricot preserves and raspberry preserves between layers.

Melt 1 cup of semi sweet morsels in microwave and spread evenly over thoroughly cooled cake. Cool overnight and cut on wax paper.

I like to trim off the edge of cake before cutting into pieces, mark out the slices so they are even, you might like to use a pizza cutter to cut these cookies or a large knife.
