CAKE:
5 eggs
1 cup sugar
2/3 cup pumpkin
1 tbsp. lemon juice
3/4 cup flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
1 cup walnuts. finely chopped
powdered sugar

FILLING:
6 oz. cream cheese, softened
1/4 cup butter, softened
1/2 tsp vanilla

Directions:
Directions:
Preheat oven to 375º.

Beat eggs and sugar in mixing bowl for 5 minutes.
Stir in pumpkin and lemon juice.
Sift flour, baking powder, spices and salt together.
Fold into batter.
Spread in greased and floured 10 x 15-inch jelly roll pan.lined with parement paper.
Top with walnuts
Bake for 15 minutes.

Invert onto towel sprinkled with powdered sugar, remove parement paper.
Roll cake in towel starting at the short end.
cool on wire rack

Combine filling ingredients in a bowl; beat until smooth.
Unroll cake carefully; spread with filling and roll cake back up.
Wrap in plastic wrap and chill over night.
