2 packages Ritz crackers, finely crushed
9 tbsp. butter, melted
1 (3 oz) package instant coconut cream pudding *
1 1/2 cups milk
1 (8 oz.) Cool Whip
1 cup coconut, toasted
1/2 gallon vanilla ice cream, softened

If you can't find coconut pudding
* use vanilla pudding and add 1/2 tsp. coconut extracts and 1/4 cup coconut.when you mix in the ice cream

Mix crackers and butter together, press into bottom of 9 x 13-inch pan.

Mix pudding and milk, add softened ice cream, blend well.

Spread over cracker mixture.

Spread Cool Whip over the pudding mixture, then top with toasted coconut.

Refrigerate over night before serving
