CRUST:
2oz. butter, softened
2 tbsp. sugar
1 cup flour
1 tsp. baking powder
1 egg

FILLING:
2 (8 oz.) cream cheese
7 tbsp. sugar
2 eggs, separated- beat whites stiff
1 tbsp. lemon juice (must be fresh real lemon)
2 tbsp. flour
2 cups milk
1 tsp. vanilla

Directions:
Directions:
Preheat oven to 325º.

CRUST:
Cream together butter, sugar.
then add flour, baking powder and egg and mix.

Butter 9 1/2 or 10" pie plate, work dough into plate to make crust.

Refrigerate while making filling.

FILLING:
Cream cheese and sugar, then add flour, egg yolk, vanilla, lemon juice and milk.
Mix until smooth, fold in egg whites.

Pour into cold crust, sprinkle top with cinnamon.

Bake for 50 to 55 minutes.

Let stand room temperature for 3 hours, then refrigerate
