1/4 cup butter
1 egg
2 tablespoons water
1 cup mash potato flakes
2 1/2 - 3 lb chicken, cut up
1/2 teaspoon salt
1/8 teaspoon pepper

Directions:
Directions:
In 13 x 9 pan, melt butter.

In bowl, combine egg with water; beat slightly.

Place potato flakes in pie pan. Dip chicken pieces in egg mixture, then roll in potato flakes to coat.

Arrange in single layer in pan, rolling in butter to coat. Sprinkle with salt and pepper.

Bake uncovered, 1 hour, turning once at 400º
