2---9 ounces Packages of Cheese Tortellini
1/2 Cup of Basil Pesto
1/2 Cup of Fresh Grated Locatelli Cheese
1/4 Cup Sun-dried Tomatoes, drained & chopped
12 to 15 Large Shrimp, peeled and deveined
1/2 Bunch of Fresh Basil, chopped

Directions:
Directions:
Cook tortellini according to package directions. When 2 or 3 minutes remain on the pasta cooking time, add the shrimp and cook until pink. Drain pasta, toss with the pesto, tomatoes and basil. Sprinkle with grated cheese. Serve very hot.
**I heat the pesto up very slow on the stove while the pasta and shrimp are cooking. Serves 4
