BASE:
90gr (3oz) butter.
one-third of a cup brown sugar, lightly packed.
1 cup plain flour.

TOPPING:
2 eggs.
half a cup of brown sugar, firmly packed.
1 tsp. vanilla
1 tbsp. plain flour
half a tsp. baking powder.
1 and a half cups coconut.
1 cup bottled fruit mince.

BASE: Beat butter with sugar until light and creamy. Stir in sifted flour, mix well. Press mixture into a 28cm X 18cm (11in X 7in) grease lamington tin lined with baking paper. Bake in moderate oven 10 minutes.

Remove from oven, spread with prepared topping, bake a further 25 to 30 mins, until firm and golden brown. Allow to cool in tin. When cold, dust with sifted icing sugar. Cut into slices.

TOPPING: Beat eggs, sugar and vanilla until thick and creamy. Fold in sifted dry ingredients, coconut and fruit mince, mix well.
