100 lb. cut up beef into pieces
19 oz. salt
7 1/2 oz. black pepper
12 oz. Freezem Pickle spice
1 tsp. Allspice
1 c. garlic juice
1 c. brown sugar
mustard seed (if you like)

Directions:
Grind and mix well. Stuff into casings. When the stuffed sausage is dry they are ready to smoke. Smoke for 8-9 hours. Start with 100º and increase until 160º.
