周六同学来,为了给她露一手,做了四个菜:糖醋里脊片、圆白菜肉卷、咖喱鸭和一个蔬菜汤。其中的糖醋里脊片那叫一个好吃,第一次做呢,把我兴奋了整整一个周末。
里脊片用刀背拍松,切成小块,用盐、料酒腌一下,然后用蛋清、淀粉和面粉拌匀准备好;2份糖1分醋,加上盐、料酒、鸡精、酱油,调制成汁;配菜有青红椒、洋葱和木耳;葱姜蒜备好。
接下来是关键的一步:炸里脊。需要炸两遍,据我同事说,做拔丝土豆的时候也得这么炸两遍,不知道为什么。
当油到5成热的时候,放入肉片,炸至淡黄色,捞出;油继续烧至7成热,再放入肉片,炸至金黄色,捞出备用。
配菜放入油锅中稍过油。
留底油,葱姜蒜爆锅,然后放入调好的汁,等冒大泡的时候,放入炸好的肉片滑炒,到肉片基本上色以后倒入配菜,稍微滑炒一下,因为青红椒过熟就不太好吃了,加入少许盐和味精即可上盘。
卖相和口感、味道都十分不错喔。
