1/2 c. raspberry vinegar or red wine vinegar
3 T. firmly packed dark brown sugar
1 c. canned chicken broth
1 t. caraway seeds
1 large (2 lbs.)red cabbage, outer leaves discarded, cored and shredded, or packaged shredded red cabbage

Directions:
Directions:
In a kettle, combine the vinegar, brown sugar, stock, caraway seeds, cabbage, salt and pepper to taste. Bring the liquid to a boil, and simmer the mixture, covered, stirring occassionally, for 50 minutes, or until the cabbage is just tender. Remove the lid, bring the liquid to a boil and boil till almost all of it is evaporated.

May be made 1 day ahead, kept covered and chilled, and reheat.
