Potato Latkes Recipe

4 medium potatoes
2 eggs
1 med. onion
1 tsp. salt
1/4 to 1/2 C flour
1/2 tsp. bk. powder
dash of pepper

Cut potatoes and onions into small pieces...place in cold water
until ready to grate or grind...DRAIN WELL....(in a colander) Mix
all ingredients together and fry in Canola oil...spoon mixture into
pancakes ....drain on toweling when pancakes are browned on
both sides....I place the pancakes on foil on a cookie sheet in
oven to keep warm....300 to 350 degrees....
