5 lb potatoes (about 5 large potatoes)
1 ½ lb onions (about 3 onions)
7 eggs
¾-1 cup flour
1 ½ - 1 ¾ t baking powder (I think teaspoon but double check with grandma!)
½ t pepper (plus a little extra)
1 ½ T salt

Directions:
Directions:
1. Measure out baking powder, pepper, salt, flour
2. Cut onions
3. Peel potatoes. Put in pot of cold water so they don’t turn brown.
4. Shred potatoes and quickly put in a bowl with the eggs to prevent browning.
5. Add remaining ingredients
6. Fry with oil until brown. Turn once.
7. Freeze. Reheat from frozen. Do not defrost. Reheat on pancake griddle to keep crispy
