1 1/2-2 lbs. chicken (your choice--I like breasts)
1/4 c. lemon juice
1/4 c. olive oil
1 tsp. salt
1 tsp. oregano
1/2 tsp. pepper
1/4 tsp. cinnamon

Directions:
Directions:
Preheat to 400F. I mix the non-chicken ingredients in a casserole baking pan and stir it up with a fork. Then, I add the chicken and flip it in the juice. Bake until it is 165 internal or not pink in the center (our oven is wacky, so I don't know how long, sorry.)

I wish this recipe was like ye old and personal, but Cedar's friend's mom had us over for lunch and I thought this was tasty, so I got the recipe. I think it is great and it is super easy, which is even better. It is great with rice (if you make enough "gravy/juice" it is great on the rice) and a steamed veggie or cut up on pasta with roasted red bell peppers.
