8 medium potatoes - baked
2 c. shredded cheddar, divided
16 oz. sour cream
2 garlic cloves, minced
1/4 c. fresh chives for garnish
1 T chopped chives
1/2 t. pepper
1/2 c. melted butter
1 1/2 t. salt
6 bacon slices cooked & crumbled

Peel potatoes & mash. Stir in 1 c. cheddar cheese, sour cream, chives, garlic, pepper, butter and salt. Spoon into lightly greased 9x13 dish. Bake at 350 degrees for 30 minutes or until thoroughly heated. Sprinkle remaining cheese, bacon and chives.
