3 lb. beef roast
1 tbsp olive oil
1/4 cup soy sauce
1 cup strong coffee
2 bay leaves
1 clove garlic, minced
1/2 tsp. oregano
1 sliced yellow onion

Directions:
Directions:
1. Preheat oven to 300º. In oven proof Dutch oven, brown roast in oil. Rub roast with minced garlic. Sprinkle with seasonings.

2. Put sliced onion over top and pour liquids over all. Put in oven and bake for 3 1/2 to 4 hours, basting with juices every hour.
