20-25 lb ground pork
8 Tbsp salt
7 Tbsp rubbed sage
2 Tbsp red pepper
1/4 lb light brown sugar

50 lb ground pork
1 lb of salt, add half and taste and then add more if needed
2 1/2 oz ground black pepper
2 oz sage
1/2 lb light brown sugar

Hot Sausage
50 lb ground pork
1 lb salt
1 1/2 oz sage
oz black pepper
1 1/2 red pepper
1/2 light brown sugar

Directions:

Mix well and stuff or make into patties.
