10 sm. bananas (5 large) mashed
1 c. rice flour
1/4 c. tapioca flour (can use white flour)
1 1/2 c. sugar
1/2 tsp. sea salt
1/2 c. thick coconut milk
3 c. grated coconut

Directions:
Directions:
Method of preparation: Put mashed bananas, rice flour, tapioca flour (or white flour), sugar, sea salt, coconut milk and 2 cups of grated coconut into large bowl. Mix until thoroughly combined. Put the mixture into a 8x8" steaming pan or baking pan. Sprinkle top with remaining 1 cup of grated coconut. Steam for 30 minutes or bake at 360 degrees for 45 minutes.
Serve hot or cold.
