10 potatoes, peeled and cut in cubes
2 onions, chopped
1 stalk celery, sliced
1 carrot, sliced
4 chicken bouillon cubes
1 Tbsp. parsley
4 cups water
2 Tbsp. margarine
2 Tbsp. flour, optional
1 (12-oz) can evaporated skimmed milk
chopped chives
salt and pepper to taste

Directions:
Directions:
Mix potatoes, onion, celery, carrot, bouillon, parsley, water, salt, pepper and margarine. Cook until potatoes are soft, then add milk when almost done. Mix flour with a little water, so it's not lumpy. Add to soup until thickened. Top with chives. To make the soup creamier, you can put potatoes in food processor when cooked and put back into soup.
