1 1/2 cups sugar
1/2 cup cornstarch
1/8 teaspoon salt
4 egg yolks
1 3/4 cup water
1/2 cup lemon juice
3 tablespoons butter
1 teaspoon grated lemon rind
1 baked 9" pastry shell

Directions:
Directions:
Combine first three ingredients in a sauce pan. Set sugar
mixture aside. Combine yolks water and lemon juice and stir
into sugar mixture. Cook over medium heat stirring
constantly until mixture thickens and boils. Boil 1 more
minute. Remove from heat and stir in butter and lemon rind.
Stir into pastry shell. Spread meringue over hot filling. (See
directions below). Bake
pie at 325º oven for 25-28 minutes.

For Meringue:
4 egg whites plus 2 extra egg whites,
3/4 teaspoon cream of tarter,
1/2 cup sugar,
1 teaspoon vanilla extract.

Beat egg whites and tarter at high speed until foamy.
Gradually add sugar one tablespoon at a time. Beat until stiff
peaks form and sugar dissolves, around 4 minutes. Then
add vanilla and beat well.
