1 medium head cauliflower
1/4 c. butter
2 T. flour
1 c. milk
1/4 c. fine white bread crumbs
3 eggs separated
1 c. grated cheese

Directions:
Directions:
cut cawliflower into flowerets. cook in salted water till tender crisp. heat butter, add flour. remove from heat and add milk gradually,and stir until smooth. return to heat until boiling add most of the bread crumbs and some salt and pepper. stir in egg yolks grated cheese and cauliflower.
beat egg whites until stiff, and fold into mixture. put in oven proof dish. sprinkle with remaining bread crumbs and bake at 400 for about 30 minutes until well risen and brown.
