1 c. bulgur
1 and 1/2 c. boiling water
1 and 1/2 tsp. salt (optional)
1/4 cup lemon juice
1/4 c. olive oil
1 clove garlic crushed
2 tomatoes, diced
1 c. chopped parsley
4 green onions, chopped

Directions:
Directions:
pour boiling water over bulgar and cover for 30 minutes. stir in next four ingredients chill for about two hours. add vegetables just before serving.
