2 Lbs. Ripe Tomatoes, peeled and diced
1/4 Tsp. Pepper
1/4 Cup Olive Oil
2 Tbsp. Fresh Parsley, minced
3/4 Tsp. Salt
1 Tsp. Sugar (to taste)
3 Tbsp. Red Wine Vinegar
2 Tbsp. Fresh Chives, minced

Directions:
Directions:
In blender or food processor blend 1/2 of the tomatoes with salt, sugar, pepper and vinegar. With blender still on add oil slowly. Combine with rest of tomatoes, chives and parsley. Refrigerate and use within a week.
