1/8 tsp salt
1/2 cup granulated sugar
1/2 cup confectioners sugar
1/4 cup unsifted flour
8 oz almond paste
2 egg whites

Directions:
Directions:
Pre-heat over 300 degrees. Lightly grease 2 large cookie sheets. Sift granulated sugar and 1/2 cups confectioners sugar with flour and salt. Set aside. Using a fork break up almond paste into small pieces in medium bowl. Add egg whites, beat with electric mixer at medium speed until well blended and smooth. With wooden spoon stir in flour mixture until well blended. Using slightly rounded teaspoon, roll dough between hands into balls about one inch in diameter. Place 2 inches apart on cookie sheet. Lightly press into rounds 11/2 inches in diameter. Press several pine nuts into top of each. Bake 20 to 25 minutes or longer or until golden. Cool and sprinkle with confectioners sugar. Store in tightly covered container to mellow. (Hands get sticky when rolling into balls. It helps to rinse hands with water and leave damp. Repeat when needed).
