1 large onion, chopped
2 cloves garlic, minced
1 Tablespoon butter
2 pounds plum or roma tomatoes, quartered (remove skins from roma tomatoes)
3 cups chicken broth
1 can (8 oz.) tomato sauce
1 Tablespoon fresh basil
1/4 teaspoon salt
dash pepper
1 cup tortillini
1/3 cup shredded parmesan cheese

Directions:
Directions:
In a large saucepan, saute onion and garlic in butter until tender. Add the tomatoes, broth, tomato sauce, basil, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 30 minutes.
Cook tortillini according to package directions; drain well and set aside. In a blender, cover and process soup in batches until smooth (Be very careful doing this - the soup is hot and you need to hold the blender cover down tight!) Return to sauce pan; add tortellini and heat through. Garnish with parmesan cheese. Makes 8 servings.
