2/3 cup white vinegar
2/3 cup vegetable oil
1/3 chopped onion
1 tsp white sugar
1 tsp salt
1 tsp dried basil
1 tsp dried oregano
1/8 tsp garlic powder
1 cup fresh broccoli florets
1 cup fresh cauliflower florets
1 cup sliced carrots
1 cup sliced mushrooms
1 can artichoke hearts (14 oz.), drained and quartered

Directions:
Directions:
In a small saucepan, whisk together the first eight ingredients. Bring mixture to a boil; cover, reduce heat and simmer 12 minutes.

Combine vegeatables in a large bowl and pour in vinegar mixture, toss to coat. Cover and chill for at least 3 hours. Serve using a slotted spoon.
