2 cups whole wheat flour
1 cup sugar
1-1/3 cup mashed bananas (3-4)
1/2 cup coarsely chopped walnuts
1/2 cup vegetable oil
1/3 tsp baking powder
1-1/3 tsp baking soda
1/2 tsp salt
3 eggs
1/2 cup cranberries or craisins (optional)

Heat oven to 350. Grease bottoms only of 2 small loaf pans (8-1/2"x4"). Beat all ingredients in large bowl at low speed for 30 seconds and then at medium speed for 45 seconds. Pour into pans. Bake 50-60 minutes or until toothpick inserted halfway between center & edge comes out clean. Cool 10 minutes. Loosen sides of loaves from pans. Cool completely before slicing.
