Parsnips
Use half again as many parsnips and you do potatoes. For example if you use 2 lbs of potatoes, use 1 lb of parsnips. Boil each separately til tender.
Strain the water off and add together. Whip together the same way you would regular mashed potatoes. Add milk, butter, salt and pepper to taste. Then add garlic to taste. You can use roasted garlic, or already chopped garlic in the jar.
