2 lbs. beef stew meat, cubed
1 large onion, chopped
4 stalks celery, diced
1 green bell pepper, chopped
6 carrots, peeled and cut into 2 inch pieces
3 white rose potatoes, peeled and cut into large chunks
2 tsp. salt
1/4 tsp. pepper
1 tsp. sugar
1/2 tsp. oregano
2 T. chopped fresh parsley
3 T. minute tapioca powder
2 1/2 c. tomato juice or V-8

Directions:
Directions:
Place beef in a large heavy casserole or pot with a tight fitting lid. Do not brown first. Add onions, celery, green pepper, carrots, and potatoes. In a small bowl combine the salt, pepper, sugar, oregano, parsley, tapioca powder, and tomato juice. Pour this mixture over the vegetables and meat. Do not stir. Cover tightly and cook 3 hours at 325 degrees or 4 hours at 275 degrees.
