1 1/2 c all purpose or unbleached flour
1 c sugar
2 t baking powder
1/2 t salt
8 oz carton (1 cup) pineapple or unflavored yogurt
1/2 c cooking oil
2 eggs
1 c coconut
1/3 c sugar
1 t cinnamon

Directions:
Preheat oven to 350. Grease 9 inch square or 11x7 pan.
Blend first 7 ingredients. Beat 3 minutes at medium speed. Pour into prepared pan. In small bowl, combine remaining ingredients. Sprinkle over batter. Bake 35 - 40 minutes, or until toothpick inserted in center comes out clean. makes 9 - 12 squares.
