1 lb Potatoes
4 6 oz Cod Fillets, skinned with bones removed
Oil for deep fat frying

BATTER
2/3 C Flour
1 Egg Yolk
2 t oil
Salt/Pepper to taste

Directions:
Cut the potatoes into 1/4 " thick slices. Cut each slice into 1/4" French fries.

Heat the oil in a deep fryer or large pot to 350ºF, add the potatoes and cook for 3 minutes, remove and shake off all oil, set aside.

To make the batter: Sift the flour into a bowl and add remaining ingredients with a pinch of salt. beat well until smooth. Set aside.

Cook the potatoes again in the oil for 5 minutes or so longer until they are good and crisp. Drain on paper towels and season with salt. Keep hot in a 200ºF oven while you cook the fish.

Dip the fillets into the batter, making sure they are evenly coated and shake off any excess.

Carefully lower the fish into the oil and cook for 5 minutes. Drain on paper towels.

Serve with malt vinegar.
