3 Medium Sweet Potatos,
1/4 tsp. of Salt,
2 beaten eggs,
1/2 c. Broken Pecans,
1/2 c. Honey,
Pie Crust (optional),
Marshmellows (optional)

Directions:
Directions:
Bring a large pot of water to a boil. Do not peel potatoes (just make sure you scrub them clean). Place them into the boiling water and cover. Let potatoes cook for 30-45 minutes until they are soft when poked with a fork. Next, run the potatoes under cool water. If you'd like, you can remove the skins now. They should just slide off. However, you may want to leave the skins on for extra fiber. Mash the potatoes together with honey, salt, pecans, and beaten eggs. Place the mixture in a greased baking dish and bake at 350º for about 30 min. or until the top of the pie gels over. For an extra kick you can back the sweet potato mixture in a pie crust and melt marshmallows over the top.

This is one of Neal's personal favorites and was given to me by his mother, Katya. Sweet potatoes are one of the healthiest foods you can eat, and, with this recipe, it won't be hard to get in your daily serving!
