2 c. sugar
1 c. vegetable oil
3 eggs
2 tsp. vanilla
2 c. shredded carrots
1 small can of mandarin oranges, drained
3 c. flour
1 c. coconut
2 1/2 tsp. soda
2 tsp. baking powder
1 tsp. salt
2 1/2 tsp. cinnamon
Walnuts & raisins optional

9x13 pan, greased and floured. Bake at 350 for 45-55 minutes.
