2 CUPS SUGAR
1/2 CUP SWEETENED CONDENSED MILK
2 CUPS LIGHT CORN SYRUP
1/2 CUP WATER
1/2 SUP BUTTER
TEMPERED DIPPING CHOCOLATE

BUTTER A 9 IN SQUARE BAKING PAN; SET ASIDE. IN A 1
QT SAUCEPAN, COMBINE CREAM AND MILK. PLACE
OVER LOW HEAT UNTIL WARM BUT DO NOT ALLOW
TO BOIL. IN A 4 QT SAUCEPAN, COMBINE CORN SYRUP,WATER AND SUGAR. PLACE OVER HIGH HEAT AND STIR WITH A
WOODED SPOON UNTIL WELL-MIXED. IF SUGAR CRYSTALS ARE PRESENT, WASH DOWN SIDES OF THE
PAN WITH A WET PASTRY BRUSH.

CLIP CANDY THERMOMETER TO SIDE OF PAN AND REDUCE HEAT TO MEDIUM HEAT. BRING TO A BOIL, COOK TO 250º OR
HARD BALL STAGE. STIR IN BUTTER AND MILK MIXTURE SLOWLY. TEMP WILL DECREASE. STIRRING CONSTANTLY, CONTINUE COOKING OVER MEDIUM
HEAT UNTIL THERMOMETER REACHES 240º TO 244º
POUR INTO PREPARED PAN. COOL OVERNIGHT.

PREPARE CHOCOLATE CUPS AND ADD A SMALL AMOUNT OF CARAMEL
TO MIDDLE OF CUPS. COVER WITH CHOCOLATE .
SET ASIDE AND ALLOW TO HARDEN
