1 1/4 c. all-purpose flour
1 c quick-cooking oats
1/2 tsp. baking soda
1/2 tsp. salt
3/4 c. packed brown sugar
1/3 c. butter
1/3 c. peanut butter
1/4 c. buttermilk
1/2 c. chocolate chips

Directions:

Preheat oven to 350. Spray a large cookie sheet with cooking spray.

Combine flour, oats, baking soda and salt.

Cream together brown sugar, butter, peanut butter, and buttermilk. Add dry mixture and stir until dough is smooth. Stir in chocolate chips.

Roll dough into 1 1/2 inch balls and place on cookie sheet. If you want to, you can flatten them a little bit with a cup...I prefer to leave them in little mounds. Bake for 10 minutes. Do not overbake because cookies will dry out.

Low fat peanut butter, oatmeal adn chocolate chip cookies. 2.5 grams of fat per cookie. Great with whole wheat flour too! :)
