1 boned and tied roast, 4-6 pounds
1 (12oz.) jar cherry preserves
1/4 cup light corn syrup
1/4 cup red wine vinegar
1/4 teaspoon salt
1/4 grated nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon cinnamon
1/8 teaspoon ground black pepper
1/4 cup sliced blanched almonds

Directions:
Directions:
Preheat oven to 325 degrees. Put pork on rack in shallow
roasting pan. Place in oven and roast uncovered about 3
hours. Meanwhile, combine the preserves, corn syrup,
vinegar, salt and spices. Bring to a boil and boil one minute.
Add almonds.
Baste the meat with the sauce several time during the last 30
minutes of roasting time. Serve the remaining sauce with the
meat.
Serves: 8
