8 oz. linguini, cooked al dente and drained
3/4 cup peeled julienne strips of carrot
1 large tomato, diced
1/4 cup sliced green onions
1/4-1/2 cup freshly grated Parmesan cheese
2 tablespoons sliced black olives
Dressing:
15-20 fresh basil leaves
4 cloves garlic, minced
1/2 cup white wine vinegar
1 1/4 cups extra virgin olive oil

Directions:
Directions:
In a large bowl, mix linguini, carrot, tomato, green onions,
Parmesan cheese and olives.

Combine basil and garlic in food processor and process until
finely minced. With processor running add oil, vinegar and
pepper. Toss salad with dressing and serve.

NOTE: this dressing also works great with the frozen pasta
salad mix you can buy at a wholesale food club.
