1 1/2 c. oil
2 c. sugar
3 eggs
2 c. grated carrots
10 oz. crushed pineapple
2 1/2 c. flour
1 tsp. salt
1 1/2 tsp. baking soda
2 tsp. cinnamon
1 c. chopped nuts
1/2 c. coconut
1 tsp. vanilla

Cream Cheese Frosting:
8 oz. Cream cheese
1 stick butter
1 box powdered sugar
1 tsp. vanilla
1/2 c. nuts
1/2 c. coconut

Directions:
Directions:
Sift: Dry ingredients together, set aside.
Mix: Oil, sugar and eggs together.
Add: Dry ingredients with carrots and pineapple, alternating until mixed well.
Add: vanilla, nut and coconut.

Bake @ 350º for 40 minutes.

Cream Cheese Frosting:
Cream: cheese and butter, add powdered sugar.
Add: vanilla, nuts and cocnut
