8 oz. old english cheese
8 oz. american cheese
8 oz. velveeta cheese
8 oz. cheddar cheese
1 c. pecans (finely ground)
Jalapeno peppers (whole seeded)

Directions:
Prepare peppers in advance. Whole peppers need to be deseeded prior to preparing the cheese.

Place 3 strips of wax paper approx. 18" long on flat surface. Sprinkle ground pecans onto the wax paper. Place jalapenos across the top of the wax paper (about 6 peppers).
Place all of the cheese in a microwavable bowl. Heat on high for 3 minutes; stir well, if cheese is not commpletely melted, heat in one minute increments. The melted cheese shouc be the consistency of thick batter.
Pour equal amounts over the 3 strips of wax paper. Flatten, then place the jalapeno on the flattened cheese about one inch from the top. Picking up the wax paper and holding the cheese in front of the jalapenos, push into the open jalapenos. Once this is completed, using the wax paper as a guide; roll the cheese into a log. Folding the wax paper completely around the jalapenos. Then wrap in foil and store in the refrigerator until ready to serve. Wheat crackers are the crackers for this cheese roll.
