8 oz. can Crushe Pineapple (drained)
6 c. diced Papaya
2 finely chopped chipotle peppers
8 c. sugar
1/4 c. Lemon or Lime Juice
1 tbsp. Cayenne Pepper
Pinch of salt

Directions:
1. Peel and finely chop (or use a food processor). Place fruit into a large pot, pour sugar over fruit and let sit over night.

2. When you are ready to make the jam, Cook over med heat until fruit becomes transparent. Add lemon or lime juice, pepper and salt. Reduce heat cover and simmer another 5 minutes. Add 2 - 6 oz. packages of liquid pectin stirring quickly. Return to a boil - boiling 5 additional minutes, stirring constantly.

3. Remove from heat and ladle into prepared jars. Cover and seal with flat lids. Let stand at room temperature for 24 hours. Check lids to be sure that the rings are on tightly. Move t a storage area
