5 pounds of corned beef brisket with seasoning packet
Additional pickling spice
small white or red boiling potatoes
1 jumbo onion, quartered
6 carrots, peeled and cubed 1" thick
1 head cabbage, quartered

Directions:
Directions:
In large stockpot, place corned beef with seasoning packet
and extra pickling spice (found in spice section of local
grocery store) and cover with water. Simmer covered for 4-5
hours or until tender. Remove corned beef and set aside.
Add vegetables to water mixture and boil until tender, about
one hour. Add whole corned beef back to pot and reheat with
vegetables. Remove corned beef and slice thin and place on
serving platter and surround it with cooked vegetables.
