1/2 lb shrimp
1/4 cup nonfat mayonnaise
1/4 cup chicken broth
1 tsp grated lemon rind
1 tbsp lemon juice
Vegetable oil
1 tbsp grated or ground ginger
1 clove garlic
2 cups penne pasta
1/4 tsp lemon pepper
1 cup asparagus, cut in 1" slices on the diagonal

Directions:
Directions:
Cook pasta according to directions, and set aside. Combine mayonnaise and next 3 ingredients, (chicken broth, lemon rind, and lemon juice). Can double the sauce at this point if so desired, stir well and set aside. Coat skillet with cooking spray, add oil, and place on medium/high heat, add ginger and garlic, then shrimp and asparagus and stir fry for 3 minutes, or until shrimp is done. Add mayonnaise mixture and pasta, warm, sprinkle with lemon pepper and serve

May want to add a little salt to taste, and cut down on the noodles a bit, we have done both in the past.
