2 15 oz cans of black beans 1 medium red onion dash of pepper 2 8 oz blocks of cream cheese 1 10 oz package Monterey jack or pepper jack cheese, grated
Drain and rinse beans. Mash with a fork. Dice onion and add to beans; add black pepper. Spread mixture on bottom of casserole. Soften cream cheese and spread on top of bean layer. Pour salsa over cheese and top with cheese. Heat 5 to 10 minutes until warm.
