8 oz egg noodles
2 lbs shrimp (or chicken for a variation)
1/2 cup butter
1 cup sour cream
1 cup mayonnaise
1 10 oz can of cream of mushroom soup
1 tbsp chopped FRESH chives
1/2 cup sherry
1 tbsp Dijon mustard
1/2 cup fresh mushrooms (sliced)
1 jar roasted red peppers (drain)
1 cup shredded cheddar cheese

Directions:
Directions:
Partially cook noodles (half of cooking time) and drain. Put in buttered 9 x 13 pyre dish. Saute shrimp in butter 5 minutes. Spoon shrimp and butter over pasta. Combine sour cream, mayonnaise, soup, chives, sherry and mustard. Fold in mushrooms and red peppers. Layer on top of shrimp. (Stick fork into mixture several places so sauce will reach bottom layer). Cover with cheese. Cook at 350º for 30 minutes. Can make ahead but does not freeze.
