2 tbsp olive oil
1/4 to 1/2 red onion sliced or diced
1 1/4 lb baby spinach
1 tbsp sherry
1 tbsp white wine vinegar or 2 tbsp sherry vinegar
1/2 cup chopped pecans
1/2 cup crumbled goat cheese (choose plain or any flavored goat cheese)

Directions:
Directions:
Heat oil over medium heat, not letting skillet smoke. Add onion and stir until soft (approximately 5 minutes). Add spinach while tossing cook until wilted. Transfer to another plate. Add vinegar, heat 5 seconds. Add spinach back in and toss. Add cheese and pecans and heat until warm and cheese begins melt. May add chopped tomatoes for a variation.
