1 med onion chopped fine
2 T. olive oil
3 cans chicken or vegetable broth
30 oz canned pumpkin
1 can diced tomatoes
1 can black beans drained and rinsed
1 T. Curry powder
1 ˝ tsp. Cumin
˝ tsp Cayenne pepper
1 cup whipping cream

Directions:
Directions:
Saute’ onion in oil
Add broth, pumpkin, tomatoes, and beans
Bring to boil.
Add spices.
Reduce heat to med-low and simmer
Add 1 cup whipping cream and heat through.
Serve with dollop sour cream.

Personal Notes:
To save a few calories I used Pam to sauté onions and omitted cream. Stirred in a dollop fat free sour cream and it was rather tastey!
