4 lb. boneless pot roast
1 large onion
carrots, baby or sliced, quantity as you desire
3-4 stalks celery
3 potatoes, peeled and cut into quarters
beef broth, enough to cover the meat (I use "Better than Bouillon" paste with water)
2 tbsp. vegetable oil

Heat oil in a large pot.

Brown meat on both sides, then add beef broth (be sure it fully covers the meat) and onions. Simmer over low heat until meat is tender.

Add carrots, wait 10 minutes, then add celery and potatoes.

Cook until done.
