8 slices bacon
1 medium onion, chopped
4 carrots, thinly sliced
8 small potatoes, peeled and cubed
6 c. milk
1 t. celery salt
salt/pepper to taste
1 c. sour cream
2 T. flour
1/4 c. green onions or scallions, chopped
1/2 c. grated cheddar cheese

Directions:

Fry bacon in soup pot until crisp. Remove bacon and drain, reserving 2 T. bacon drippings. Saute' onions and carrots in bacon drippings until tender. Add potatoes. Cook until slightly browned, stirring frequently. Add milk, bring to boil. Reduce heat. Add celery seed, salt, and pepper. Cook over low heat for 30 to 45 minutes. Mix sour cream and flour together. Stir into soup. Cook over low heat 5 to 10 minutes or until soup is of desired consistency. (Add milk for thinner soup.) Garnish with crumbled bacon, onions, and cheese.
