Cake:
3/4 C Oil
1 C Sugar
2 Eggs, beaten
1 C Flour
1 t Baking Soda
1/2 t Cinnamon
1 pinch of Salt
1 C grated Carrot
1/2 C Crushed Pineapple, not drained
1/2 C Sweetened Coconut
1/2 C Chopped Nuts
1/8 t Vanilla

Cream Cheese Icing:
4 oz Cream Cheese
1/2 t Vanilla
1/4 C Butter
1 1/2 C Powdered Sugar

Directions:
Directions:
Beat Eggs, add Oil and Sugar.
Sift together Flour, Cinnamon and Salt.
Mix together and add Carrots, Walnuts and Vanilla.
Preheat oven to 350 degrees.
Pour into 9X9 pan and bake for 25-30 minutes.
Let cool and frost with icing and sprinkle with chopped nuts.
