1 medium Spanish onion, chopped
3 jalapeno chile peppers, minced
2 tbsp. olive oil
1 10 oz package chopped spinach
1 8 oz package cream cheese
1 cup half & half
1 tbsp red wine vineger
8 oz Monterey Jack Cheese, grated

Directions:
Directions:
- Saute onion and jalapeno in olive oil

-Add spinach, cream cheese, half & half and red wine vinegar

-Place mixture in greased casserole dish

-Add grated Monterey Jack Cheese

-Bake at 350º for 20 minutes

-Serve with crackers or bread
